Join us for an elegant late-winter five-course tasting dinner paired with handcrafted seasonal cocktails. This special evening celebrates the quiet magic between winter and spring, with dishes and cocktails inspired by citrus, herbs, florals, and warming seasonal flavors. Guests will dine together at our king’s banquet table inside the beautiful Marta Louise Ballroom.
Each course is designed as a tasting-size portion, beautifully plated and flavorful. While the earlier courses are small and curated, the fourth course is a heartier, more substantial tasting portion, ensuring the full progression leaves guests comfortably full and satisfied.
A zero-proof pairing is also available for guests who prefer a non-alcoholic option.
THE MENU
Course One
Citrus-Honey Burrata Crostini
A crostini topped with creamy burrata, blood orange, honey, and basil oil—light and bright to begin the evening.
Paired Cocktail: Frosted Orchard Spritz — Vodka, pear nectar, vanilla, and prosecco.
Course Two
Rosemary Goat Cheese Tartlet with Fig Compote
A warm tartlet filled with savory whipped goat cheese and topped with sweet fig and rosemary crumble.
Paired Cocktail: Winter Rose Gimlet — Gin, rose cordial, lime, and rosemary essence.
Course Three
Pistachio-Crusted Salmon with Lemon Cream
A tasting portion of salmon crusted with pistachio and served with roasted fennel, micro greens, and a bright lemon cream.
Paired Cocktail: Silver Moon Sour — Tequila blanco, lemon, sage, and silver shimmer.
Course Four
Braised Beef Medallions with Blackberry Demi
A heartier tasting portion featuring a tender braised beef medallion served over creamy whipped potatoes, accompanied by winter root vegetables and finished with a rich blackberry-thyme demi-glace.
Paired Cocktail: Midnight Ember Old Fashioned — Bourbon, black walnut bitters, blackberry syrup, and an orange expression.
Course Five
White Chocolate Lavender Mousse
A delicate tasting-size mousse of white chocolate and lavender, finished with a simple white chocolate garnish.
Paired Cocktail: Enchanted Espresso Martini — Espresso, vanilla, lavender, and white chocolate.
