Begin the holiday season with an unforgettable evening at the Castle. The Yuletide Spirits Banquet is a five-course tasting and cocktail pairing dinner, set in our warm, candlelit banquet hall decorated for the season with classic Christmas touches.
Guests will be seated at communal tables, creating a shared, festive experience while holiday music fills the room. Each course is a chef-crafted tasting, designed to pair perfectly with a handcrafted mini holiday cocktail (or a zero-proof version, if preferred).
This is not a traditional sit-down dinner — it’s a guided tasting experience that captures the magic of the season through food, drink, and atmosphere.
Five-Course Tasting Menu & Pairings
Course 1 — Welcome
Cranberry-orange baked brie tartlet with toasted pecans
Pairing: Sparkling Cranberry — sparkling wine, cranberry, elderflower, rosemary sprig, sugared rim
Course 2 — Savory Bite
Bacon-wrapped date stuffed with blue cheese, finished with warm honey and cracked pepper
Pairing: Spiced Flip — spiced rum, maple-cinnamon syrup, cream, nutmeg
Course 3 — Light & Fresh
Smoked salmon mousse on a crostini with lemon zest and dill
Pairing: Cranberry Mule — vodka, cranberry syrup, lime, ginger beer, sugared cranberries
Course 4 — Hearty Tasting Plate
Herb-crusted beef tenderloin medallion with red wine demi-glace
Creamy truffled mashed potatoes
Roasted haricots verts with caramelized shallots
Pairing: Cranberry Old Fashioned — bourbon, cranberry-orange syrup, bitters, orange oil, cinnamon stick
